25th Birthday cake

Hi loves! Although I really wanted a big chocolate cake with candles to blow out for my birthday, I knew that I would not be able to enjoy it fully because of my lactose intolerance. The last thing I wanted was to miss out on my birthday celebration lying in bed with a stomach ache! So I decided to "bake" a dessert I had been wanting to try out for the longest time... A dairy-free cheesecake!


I went all out and incorporated three different flavored layers; vanilla, chocolate, and strawberry. The crust was made with nuts, dates, and raw cacao powder. The texture was definitely something to get used to, but I am very happy with the way it turned out and that I can have my cake and eat it too without having to worry about stomach cramps!
